Scott & Cynthia Porter

Scott and Cynthia both served previously as US Army Officers, then resided outside Atlanta working in corporate healthcare. Like many others in 2020, they were led by their faith and trust in God to begin a new life focused on family, the health and welfare of the land and animals, and developing relationships. The Porters reside on the farm and call the Crossville community home.

John & Kathryn Holler

John and Kathryn founded, owned, and operated an award-winning craft brewery in Houston, TX. They loved building community through producing high-quality, artisanal products. But shortly after they learned about the regenerative farming revolution, their desire to join it proved irresistible. In 2022, they sold their brewery to another family and relocated to Hixson, TN, where they now raise their 3 children, commute to the farm, and manage local markets and deliveries.

Adlai Holler

Adlai started his career in technology, freelancing in various places around the world, then working for Pinterest and Google. Wanting to do something more meaningful, the 2020 covid lockdowns gave him the impetus to leave those jobs and become the first to live on the farm and get everything started. Now he has a home in Chattanooga where he spends his time off with his dog and his friends, looking to start a family.

What We Don't Do

No Pharma

No vaccines, antibiotics, hormones, dewormers, or other chemical interventions into our animals' bodies.

No 'Cides

No pesticides, herbicides, or fungicides and no chemical fertilizers.

No GMO

We'd rather observe the results of the GMO experiment from afar than be its unwitting subjects.

No Grain

Our cows live off the land, supplemented with no-spray hay during parts of winter. We don't feed grains or anything else to them.

Cattle & Grass-Finished Beef

Beef cattle are the heart of our operation — the main tool we use to regenerate our land. Their rumen has the miraculous capability of turning grass into biologically active litter, turning dirt into soil, and, as a byproduct, producing a bounty of the most delicious, nutrient-dense food on the planet.

Our South Poll herd is heat-tolerant, winter-hardy, and highly maternal. We've never had to pull a calf. We move them across a 1- or 2-acre paddock at a time, mimicking how prairie herds once grazed — intense impact, long rest. The other 188 acres recover while one paddock works.

We feed grass only, finish on grass, and never vaccinate. Beef is leaner than grain-finished, but juicy and deeply satiating. Our beef is sold by the side.

The Orchard

Our 240-acre farm came with a 3-acre conventional apple orchard and 400 mature bearing trees. We weren't going to manage it the conventional way — heavy chemical use has no place on a regenerative farm. So we let nature take its course, then in 2024 began managing the orchard holistically.

We prune for airflow and sunlight, apply tons of wood chips to build fungally active soil, and spray neem oil, whey, probiotics, molasses, and liquid fish to feed the trees and stimulate natural resistance. Geese cycle nutrients and help with pests. We don't wear a hazmat suit to spray, and neither do our geese.

Varieties include Arkansas Black, Mutsu, Golden Delicious, Honey Crisp, Gala, Zestar!, Stamen, Royal Empire, and Red Delicious. We sell whole apples and freshly pressed raw apple cider when available.
